Hospitality is fast. Your books need to be faster. When sales are coming in all day and costs are moving every week, you cannot wait until the end of the quarter to find out if you are making money.

The first priority is clean sales reporting. Your POS should map to your bookkeeping so revenue lands in the right place: food, beer, wine, liquor, merch, catering, gift cards. If everything hits one bucket, you lose the ability to spot what is working and what is dragging margins down.

Next is cost of goods sold. Track purchases by category and timing, then compare it to sales. A spike in food cost might be waste, theft, portioning, vendor pricing, or menu mix. You cannot fix what you cannot see.

Payroll is another pressure point. Tip reporting, overtime, and multiple roles can create errors that cost you in taxes and compliance. Tight payroll bookkeeping keeps your reports accurate and helps you avoid surprises.

Then there is sales tax. Bars and cafés often have taxable and non-taxable items, plus different rules for alcohol, prepared food, and retail. If sales tax is not set up correctly in the POS and the books, you can pay too much or not enough. Both hurt.
